Thanks for the advice, gents. I'm going in May so hopefully the weather will be decent (think I'll be keeping my claes on though!). Having said that, I went to Vlieland in May 2019 (see a previous challenge of mine) and it was fogged in. Still a nice part of the world, the fog just added to the 'end of the world' feel. I know that Sylt is a bit more developed tourism-wise than Vleiland though

Sylt is a bit more posh. With expensive houses and private beeches. Lots of expensive private jets on the apron.
A couple of years ago I flew there myself. Got quite a scare when the alarm for the middle marker went off. They are so rare I didn't know what it was at first!

Funnily enough I was at Seaton Sluice, just up the road from Whitley Bay, this afternoon. Not exactly tropical when those easterlies are blowing in...
