Always thought this was the case, Ryanair would move it to STN, once easyJet pull out.
I would suspect Ryanair will keep the route for the summer, but highly doubt it will still be operating come the winter.
As the STN route is only operating three times daily, it not practical to move LTN passengers to the STN route.
easyJet and Ryanair originally chose to operate the Copenhagen route from Luton in the first instance, as Danish airport were offering massive incentives to LCC's to start new routes which were not previously served from there. So hence they both went for the LTN market, as LHR, LGW and STN were being served.
I'd imagine easyJet held out on the route as long as they did, to maintain any contractual obligations they had with CPH.
If the CPH route at LTN continues with FR will be interesting to see how the pricing compares to STN. Maybe increase the prices, so STN is more attractive to use that route.
I suppose there is a slim chance they could operate side by side like the Dublin routes from both airports.

Bit early for that, More than likely a valid reason in 2019/2020. Wizzair will take a major hit unfortunately.

Danish article seems to state that CPH will stay at Luton with 1 daily departure, while the other 3 departures move to STN.

I think even two daily and that's pushing it would be a very risky move by Monarch who are not known for schedules like that, more like 4 days a week maybe but definitely not twice daily.

I did 2 returns to Copenhagen with the second return costing me well under £10 for 2 flights including all taxes and charges.
The price was the only reason for this route being Luton's busiest and it was the price that created most of the demand.
At least we will be able to say next year that passenger numbers have plummeted at Stansted since the service was moved there so was a bad move by the airline

I don't believe this is adding any new based aircraft anywhere, just re-jigging existing capacity, they have been talking about 20M all year through STN. Launching new routes will get subsidies from MAG but it looks like at the expense of other existing routes.

Even with Ryanair keeping a daily flight from Luton to Copenhagen (well for now at least), there's nothing to stop easyJet returning to the route and it woudn't surprise me if they did at some point.

Construction update
Tuesday saw work start again on the digging out of the embankment for the dual carriageway.
The foundations seem to be all but complete for pier B
All exit barriers and road markings around them have been completed since Christmas....
...although there is no signage for the multistory car park on the approach to its entrance, which drop away on the bend in the road.
Work started today on digging up the former entrance to the service road. The ground here will be raised by around a metre. Where the digger is located will be one of two extra bus bays.
The two brokendown lifts by the short term car park have now been repaired after around 2 weeks of being out of action so the crossing point across the approach road has been closed again.
It has been noted that the thick multilayered light blue paint that covers the floors in the lobbies by the lift shafts, the staircases and the footbridges are starting to peel back to bare concrete. In the terminal side lobby of the footbridge the airports famous yellow and black tape has been put down to protect the edges where the paint has lifted. Upstairs on the footbridges there are too many flaking locations to put down tape.

Ryanair
Looks like the Ryanair cuts are as follows:
Copenhagen as reported cut from 4x to 1x daily
Cagliari 3x weekly axed
Nimes cut from 6x to 3x weekly
Beziers remains 4x weekly
The schedule now looks a bit of a mess so I think this may still be work in progress. Seems though as may be expected that the 5th based aircraft may be removed, taking LTN back to 4 based.
