Easyjet is accepting pilots with english level 5, but they say, they need to achieve level 6 whitin the 6 months.
What happens if they don't?

2- The companies are responsible for creating their own EOSID.

There are the Airbus SOP's and the airline SOP's which are based on the plane manufacture and can be different.
Where I fly we must watch the other pilot do there...
