So what happened to the mantra "it's extremely unlikely you will get infected in an aircraft" at the very beginning of the pandemic.

Whatever has caused them to change their point of view, for sure we know tons more about the virus since the very beginning of the pandemic. We know what causes it and better ways to treat it and ameliorate its effects.

A very sensible move. Which responsible intelligent airline staff would object?. Vaccination is the only solution to get mass travel moving again.
Such a mandate not necessary here in the UK as it is regarded as a common sense normal safety requirement, and staff already complying.
