I went for an interview at Etihad for the A320. They told me we'd all be CCQ'ed to the A330 - probably.

Never having flown widebody/longhaul I'm not sure what the big differences are.

I dream not, I'm just repeating what I was told at the interview. It does seem clear enough that five years is the absolute theoretical minimum, and it could be far longer in reality.

At the interview they suggested joining on expat contract then switching to local contract; this can be done at any time with just a day's notice. Then the clock starts ticking on your five years...
