Minimum legal on an A321 in my experience is four, although we always operate with five. Have never seen an A321 with 214 seats though, suspect that is charter/low cost config.

generally cabin crew vacancies are directly proportionate to pilot vacancies, ie. no one's hiring, but plenty of firing.

Ryanair are always hiring, or the middle eastern ones are your best bet.

a lot of the long hauls go out at that time. Driving around T3 at approx 7pm-8pm can become a long, drawn out affair.
