Right Decision?

Well, it's a bit too late to ask this cause I made my decision, but I wanted to know what you guys think...

Would you take a job as an F/O on a 737NG at home with a low cost start-up airline or a A310 F/O job overseas with a STABLE Cargo Airline.

Personally, rightly or wrongly I'd go for the stable airline that is offering the heaviest jet, A310 time could be invaluable and open up alot of doors for you in the future should you wish to fly heavy long haul. This is only my opinion

There's a lot to be said for being at home.

It really depends on your personal needs.

is there such a thing as a stable airline?

based on the way you stated the choice, I think I would have gone with the NG job, reason: newer technology, popular aircraft being widely used.

The trouble with having a choice is, it raises your opportunity to go the wrong way!
