Australian pilots can work for US regionals.

Visa doesn't transfer, but you can actually hold multiple E3s. So you get an offer from a new employer, get the appropriate paperwork, go to consulate appointment, reenter with 2 visas, start new job when ready.
If you apply for a full-time position at a new company, your old e3 will be cancelled (if your previous position was fulltime) when your new one is approved.
You may very well be right. I know it's possible to hold multiple E3s, as I know someone who's done it, but I'm not sure where the limits of that are.
May not be the worst thing avoiding that mob. From what I have read/heard they aren't exactly pleasant to work for, sounds like it's not exactly difficult to get fired for even just taking a sick day. It may also help if they would pay a half liveable wage...from the pay scale I saw online its pretty awful. Good luck making ends meet on that salary!

LW,
Yes, they don't get high marks from those who comment about them on av websites. Hard to say how much is accurate but there must be something to it. As for pay, they're in the high $30s/hour first year. Several others are about the same. The highest starting pay seems to be Endeavor and the 3 AA wholly-owned regionals at ~$50/hour...and Republic at $46. But those don't appear to be interested in E3s...that I've heard of.
GoJet would fill a square by getting an E3 candidate an FAA ATP with type rating and some air carrier experience...not that I'm singing GoJet's praises !
I’ve heard that it’s starting to go gang busters over in the land of the free. Overall what are opportunities like for a 737 FO with a bit of time on type?
Looking at all opportunities as the land of the fearful is getting a bit tedious.

Here are a few 737 operators you might look at:

Unlikely at the moment without a Green Card. They’ll always take a US RJ guy over someone who hasn’t flown in the US but has a bit of time on type. IF and it’s a big if hiring keeps going the way it’s looking like it might, places like Sun Country may struggle to get applicants and seriously think about E3’s.
Southern had taken E-3's pre-covid, I haven't heard anything about them taking any ones yet, but they have been losing a lot of pilots to attrition even during 2020-21, so...
Unless the pilot pool here gets dryer than the Sahara, you are not getting a shot at a narrow body on an E3 anywhere unless you're already at a regional.
