Hi there, I am currently flying on the B737 F/O in Slovakia, and looking for a contract in UK. Can I be paid offshore or do I need to pay UK tax? How easy is it to find a good contract through these agencies?

Be very careful cz737! 
Offshoreing your wages out of the UK without the taxman knowing is illegal unless you have a very creative accountant
and a penchant for gambling with your finances.
The UK taxman has his sights set on pilots and agencies this year to clamp down on this

If you want to sleep well steer clear of anyone who claims to be able to pay you offshore - they are sharks playing roulette with your finances (never mind appealing to your avarice).
