We regularly adjust or set up the refuelling panel in our A320/21 fleet. We have a laminated card in the flight deck as an aide memoir when we divert and have to do it ourselves. Certainly no restrictions.

There are anomalies. AA air crew tend to look after their own refueling on a regular basis even with their bigger aircraft such as the 787.
I occasionally has to refuel the 744 on a divert field or at an airport that didn't usually get 747s. Just RTFM (read the Fueling manual)!
