Yea TUI contracts are CDD, proper French temporary contract, it is not a self employed status at all.

Travel service request arround 1000h I believe and TUI does...

First I think for less than 1000h, not so many good opportunities in France, even more if you want to stay on 737.
Transavia, Airfrance, Hop but hard to get....
