ME/IR Query

Hi all

Might be over thinking this but got a slightly complex question to ask. Here are the facts:
IR expires 28/01/21.
MEP expires 31/01/21.
Currently with UK CAA but have a pending SOLI application to IAA.

I will be revalidating my IR in the DA42 sim on 04/12/20 and plan to let the MEP lapse and then renew it the following year in the aircraft with the IR revalidation. Doing it at a UK school with a UK examiner before Brexit so IAA can have no complaints for when they subsequently issue me an Irish licence. Appreciate that if my licence comes before 04/12/20 I will need permission from IAA to use a CAA examiner etc etc.

As my SOLI application was only submitted late Aug / early Sept and with COVID causing working restrictions I fully expect it to be into 2021 before I exchange licences. Here lies my question.
What if the IAA do not process my licence until after 31/01/21? The expired MEP rating will have dropped off the licence but does that then mean it would only be issued with IR-SP-SE class? Or would it still show IR-SP-ME class/SE valid till 28/02/22 but I just would not be able to exercise its privileges?
