VFR above cloud, or not?

Sorry if I’m going over old ground or any of these are obvious but I just want to make sure I know what’s what.
Say the cloud is SCT at 3000ft, you would have to fly at least 4000’ to remain VMC?
I’m aware the visibility is the distance in front of you. i.e. If there is a FEW cloud 1000m ahead you would have a flight visibility of 1000m. Is this only directly ahead or is there a certain scope (such as 20deg either side of the nose)
Also, when descending from over some SCT cloud, if there is a large enough gap in the cloud could you go through it and still remain VMC. I mean by this that the cloud would be say 50m either side of the a/c but directly ahead was clear.
I know someone who was flying with the air cadets once and was flying manoeuvres around clouds, would this be ‘clear of cloud’ if below 3000’.
