logging hours in a foreign aircraft

Good day all

Hope someone can share some insight on this. I'm currently overseas and just got an email of a possible job offer but they need me to be current. I have a FAA license and there's no N registered aircraft where im vacationing

So I've contacted a flight school and im going to go up for a few hours with an instructor to get current again and I was gonna plan on going for a joy flight and seeing the place im vacationing from a different perspective.

Due to insurance purposes and flying the schools plane on a foreign license the school requires that an instructor is with me which I totally understand, rules are rules. How would one log these hours? could I log it as PIC still?

FAA regs say you can log PIC time on anything you are rated in if you are the sole manipulator of the controls. But you already knew that.
