Hello Nordic Fourm,
I have just arrived in Stavanger to join my spouse, and am looking to convert my South African Commercial Pilot IR/ME license to JAA FCL, can somebody please point me in the right direction, where I can get more information about the conversion in Norway, as I am not sure if there is a flight school in Stavanger and also are there any regional online forums where I can get more information about the conversion and employment prospects here.
If anyone can shed light on the costs involved and whether it is more economical to convert elsewhere in Europe and get the CAA to approve it here.
Any information will be greatly appreciated.

I have several friends here in Sweden who have done what you are looking for. I know that this isn't what you asked for but since Sweden is "nearby" I can have a look. If you are interested I can try to look up some information.
I know that you will have to finish a JAR ATP-theory course. And then skilltest for CPL IR ME. I think that it's up to the FTO to decide how much flight training is required. Also a JAR-FCL3 medical class 1.
If you do it in Sweden I think you will be looking at a cost of €15-20k
Note the extensive usage of the word "think" in my post!

If you want to do it in Norway there's only one school that provides training for the atpl-theory and two schools where you can do the cpl-ir/me stuff. You can do the training for the exams at Luftfartsskolen in Oslo, costs about 50.000,- including caa fees. For the flying you got Rørosfly in Røros and Pilot Flyskole in Sandefjord. The multis cost 4.600-6.000 per hour. You need to fly 12, 15, 20, or 25 hours depending on your total time. The total price will be anywhere from 120.000,- to 180.000,- depending on your tt. If you want your cpl issued in Norway you also need to do your medical in Oslo which is about 6.500 kroner.
You can do the conversion in any JAA state and then transfer the license to the country you're living in.

You can do your ATPLf in Stavanger at Fjellfly( Fjellfly ).
They started up last year and are no just finishing up the first batch of students.
The fly time needed you must do at Røros fly (Rørosfly AS: Velkommen til flyskolen i hjertet av Norge ) or at Pilot Flyskole ( Forside | Pilot Flyskole ).

can you recommend any other options and one important question on my mind is are there jobs, after conversion and does one compulsorily need to speak any of the Scandinavian languages to be employable, am looking for work in Norway as my family is in Stavanger.

I did my MEIR conversion there and they did a very good job. There is plenty of instrument approaches available in the area, as Reykjavik and Keflavik is 20 min flight within each other. Most important the price is very good for the quality of the training you get.
If you decide to go all the way and get an Icelandic license the authorities will hand it over to you on the same day as you apply if everything is okay and not in 3-4 weeks as the UK CAA takes for processing.
