AOC theory training

I'm continually disappointed by the online training my employer, a UK AOC holder, contracts for my theoretical training.

I haven't looked into it in detail yet, but was wondering if anyone can quickly point me in the direction of the appropriate regulation with regards to offering theoretical training. We have an ATO and restricted ATO, but I am quite keen on developing this as a sideline as I don't feel any of the offerings by CAE, FSi, et al are really very effective at imparting useable knowledge.
