Question 5 year fully checkable history with no convictions

Looking at the requirements for a job at dispatch, ops, etc, I have found that this is asked everywhere.
How do you make them know that you have a fully checkable 5 year employment/unemployment history with no criminal convictions? What sort of documents do you use for this?

Your help is much appreciated.

Disclosure Scotland is check 1.

There is also a 5 year ref check done independently by the Airport Authority for the issue of a Airside ID.
