Can anyone help? Why do some forums come up with the last 30- 60 days, and others, the last 5 days. No matter if I select longer, these forums revert back to 5 days, next time I log in.

You can set how far back the forums will show in your profile.
Go to Edit Options >> Default Thread View:
And you will find a drop down menu with many options.
