Would you takeoff on 36 with the added 20 knots for increased rudder control or try to use the other runway with the crosswind on the proper side to aid with directional control.

Has to be 36 as you are already 20 knots closer to Vmcg, through Vmca on your way to Vmc. ?.
Technically and properly planned with enough runway I suppose it is posssible to get a light Gulfstream away. They have the grunt and the vertical stab, or is that what Gulfstreamaviator was on about.
All the speeds are based on takeoff power which is the problem, judicious use of lower power initally on the live one as you accelerate should help mitigate its tendency to screw you.
