On the 737NG's with which I'm familiar
moving the switch to off 1. cuts pneumatics, 2, cuts AC and everything but the battery busses, and 3. starts the shutdown timer which is not reversable.
Now I've never personally reset the AC busses to find out if it'll reset the shutdown but every time I've moved the switch to off and back to run it shut down.
