I note that the OP appears to have done his home work and be well prepared, a good trait in a pilot.
I wish I had a job that allowed me to provide for my family and be able to allow me to save the amount of money he appears to have.
One piece of advice I would give. Do not cut of your ties with your current profession, as I mentioned above having been made redundant without another career to fall back on is a nasty place to be.
