No, both stands 60 and 61, which is angled from the other direction only work because of the angle. If the stands were straight in there would be no taxiway echo and the main and north apron would just be one big apron but at different heights. Taxiway echo is basically like a canal lock gate to get aircraft on to a different level. Also, and this might well be the main reason, I seem to remember that without the angle there would not be enough clearance on taxiway echo as the angle tucks the tails in of aircraft parked on those stands.
Oh and the reason why the northern apron is at the height it is, is that it had to connect to the existing taxiway delta that was put in to serve the cargo stands, which is also the reason why the eastern apron is at the height it is, which again is different to the northern apron as taxiway delta runs up hill although you wouldn't notice it.
