Remember that the fidelity of the simulator flight controls is largely unrepresentative of the actual feel, especially in the hover. What would be useful is to study the useable payload versus fuel load characteristics of your operator's aircraft to get a feel for "how much, for how long", then see what the normal cruise IAS is for that aircraft. In a helicopter anything above a stiff breeze soon becomes a factor in mission planning.
