Haha, "overly experienced". Get two candidates, stick them in the sim and see how they act and fly, then have a nice little chat about their lives and outlook. Experience coupled with personality is what is important, not whether you've memorized the "correct profile" and know the airspeed velocity of an unladen European Sparrow.
