Firstly, its been a few years since I did my initial (2008), but I did my instructors rating at Curtis Aviation and can highly recommend them.
Secondly, with regards to hours, you require a min of 50 hours of flying on flight instructors course, of which a maximum of 20 hours can be mutual with another FIC student. There was a large amount of theory and briefing involved as well. When I did mine, I did the course solo, so completed all 50 hours as dual with the instructor, no mutual.
Thirdly, with the new Part 61 and other regs coming in December, depending on who you speak to, depends on the response. Even different people in CASA have a different opinion on the interpretation of the rules and how they will be implemented
