Not flying for DHL, but the temperature in the cargo holds is adjustable from the flightdeck. If temperature sensitive cargo is loaded and declared as such, the temperature is usually set accordingly. Another possibility is to have the cargo loaded in an active cooling containter. However, I don't know if DHL transports such cargo or is just flying 'normal' packages.
