A: There isn't one, as you alluded to in your post. The maximum
demonstrated is just that, the maximum crosswind demonstrated for that aircraft type. Above that it is a judgement call by the pilot, who assesses the factors on the day, and makes a decision what to do.
In other words there is no line in the sand. Just a big grey area.
