Well, that very much depends on what you're looking at. Off days could be planned months ahead and normally assigned as requested. Work days roster do get disrupted at discretion of flight ops requirement (just like any airline, acceptably), but more annoyingly, senior local crews WILL snatch any perceptibly good trips (good golfing destinations, long layover) any time they could and able to.
And they are tonnes of other pointers, basically you gotta hate CX quite a bit to throw in the towel and hop over and lower your pride with the Koreans. I bet most won't last even a single contract.
