I would try and do the route planning using a random route track to be planned on the day of the flight to make max use of the winds. I would also make sure you have depress fuel and or 1 Eng out out diversion fuel. It might not be a ETOPS flight but you still need take certain failures into account. Make sure you HF works. Atlantico's HF reception can be really bad so expect long periods of silence. You can try relay with Jnb Oceanic of you are struggling with comms.
