I have never had to resort to the practice but then again no employer has ever asked to see my log book.
It depends of the situation.
In 2009 I was called for an interview for a PIC job on a british registered R44, based in italy. The FI/FE (and CAA inspector) did not care about my logbook, we just went for a half an hour flight.
In another interview for a first officer job with a bigger company running only twin engined machines, they just asked for a "self certification" of night, ifr and turbine experience.
I was not tested in flight.
