Actually, MAN-NOC would not be a surprising choice in any way as this is a mature, long-established route which is about to be vacated by BMI Baby when they close their MAN base at the end of Summer 2011. MAN and LPL do have overlapping catchment areas, but they are far from identical. For some people, only one of the two is convenient for their journey. This is why it makes sense for Ryanair to serve LPL, MAN, LBA and EMA as separate markets and not rely on customers to travel to the least convenient of these airports as they see it. If they don't do this, the punters have a nasty tendency to select the journey which best suits their own needs ... not the route preferred by a particular airline's planning department.
