I can think of several things which are typical for Schiphol. One procedure is quite special, the converging landing procedure. Simultaneous use of runway 06 and 36R is not uncommon (there a several more converging runway combinations). Only outside UDP heavy traffic is being staggered. For some foreign pilots this comes as a surprise.
Another thing quite special for such a big airport is that VFR traffic is still allowed to use Schiphol, not only as a destination but also to cross overhead the airport over sightseeing the airport and the Amsterdam area. Even touch & go are allowed.
