The 380 is capable of using either runway. However, during Westerlies it will use 23R to land and 23L to depart, during Easterlies, 05R to land and 05L for departure. The other runway IS opened for just one movement and usually uses the same controller for both runways.
The reason for the above is to ease taxi restrictions past T3 because if the 380 were to taxi along J there could be no aircraft parked on the end of pier A or any aircraft pushing onto G.
During low viz procedures the 380 will have to use 23R/05L so these restrictions will be an issue.
