I've flown a 737 single pilot, on passenger carrying commercial airline operations (
in effect). It's not difficult, and military pilots have no trouble doing it every day of the week. The only trouble would be staying awake, with the silly locked cockpit door rules in place these days.
Save a load of cash on CRM training, as well.
