I've flown from the Um Al Quwain ultra light club which is about 1.5 hours drive from Dubai, they operate a number of different types of Aeroprakt aircraft.

Flying down along the coast with the canopy off as the sun set was a truly wonderful experience and cost around 300 dhr per hour.
If this doesnt work out, you could always sit in the Irish Village and have a Guinness or two for me.
