I know AMS very well but have only transited once, GLA - AMS - YVR. We had about 30 mins between flights, only enough time to stop for quick smoke (yes, I know, it's a filthy habit) then yomp to departure gate. Be aware, Schiphol is a pretty large airport but well laid out and signposted with good facilties. The time you have in transit should let you connect comfortably, no need to touch baggage.
We also flew KLM but on MD11, the experience was horrendous. IFE was a large screen but headphones kept adjusting themselves to full volume almost deafening me, overhead lights would not turn on then came on by themselves when trying to sleep, the sludge they served as sweet & sour chicken was unrecognisable and CC indifferent to complaints. KLM could not be bothered with my complaint when we came through on return. Will never fly KLM again.
