In my company operating both the -800 and -900:
-800, 120 bags in hold 3, the rest in hold 2 and load / offload passengers as normal.
-900, 25 bags in hold 2 1st, the rest in 3. Load passengers, rows 1 to 17 (I think) 1st, then the rest of the passengers. Unloading, rows 17 and aft 1st then the rest of the forward rows. (Keeping the weight forward obviously)
I don’t know about the hard facts and figures about it tipping, but that’s what we do.
