If things were as bad as you claim you saw, I hope you made a report about it. Myself, having worked at LGW for a considerable number of years now would actually claim that LGW crew are amongst the strictest for following SOP's.
And with regards to poor customer service, I would dispute that 110%. I am forever being told by pax that they prefer flying easyJet to the other airlines because they enjoy flying with our crew for the great service that they receive and that they always receive service with a smile (and they always then mention a certain other airline that we compete with at LGW saying we are much better than them).
With regards to stealing from the bars, well that is a big no-no. If you witnessed crew stealing, then you should have done something about it.
