I see you are in the USA; the FAA Aeromedical Center is very helpful and you need to contact them. In Europe, under JAR regulations, ulcerative colitis is unfortunately a no-no for initial Class 1 medical certification (JAR-FCL 3), but if satisfactorily recovered for more than a year without symptoms or medication from a single acute episode. you might be all right.
