Of course the tracker deal will apply. Easyjet only intend to buy GB, the deal hasn't been done yet, so it's not a surprise that nothing has been published on the subject. When the deal is completed in 6?-8? weeks time, GB will be a subsidiary of Easyjet and will be run as a seperate company accordingly. So pay deals and pay rises will happen within the subsidiary company for at least a year and possibly a number of years to come until a new agreement is reached between GB pilots (represented by balpa) and Easyjet management.
