RR-powered 767s were only ordered by BA and China Eastern. From memory, BA took 28 and China Eastern ordered 3. Everyone else went for either GE CF6 or PW4000 engines on 767-300s. BA leased a number of aircraft (I think it's seven) to Qantas and so QF are another operator of RR-powered 767s, even though the aircraft which Qantas ordered themselves are CF6 powered.

I'm under the impression that the engines on the ex-GF aircraft are so limiting that if Jet2 are going down this road, they will need a longer runway (or a techstop at a service station on the M62) to go long-haul ex LBA with them. The performance of the RB211-powered aircraft isn't a great deal better as the engines are so heavy.
