Regarding Ryanair, if they have the misfortune of being unable to arrive on time at one of the busier times of the day, and subsequently pitch up at the airport when most of the ground crews are knocking off for the night (some after a 16 hour shift), then it is just bad luck.

The inbound nightstopping aircraft, which are on time, will be given priority over the delayed flight. Invariably the crews servicing these inbound nightstoppers are completing their final duty before going home. Why should they be inconvenienced and forced to stop and do extra work, just because somebody is running late? And particularly so when Ryanair operations are such a pleasant and charming bunch of people to deal with. They seem to think that 3rd World Dictators have much to teach us in terms of man management techniques.

Similarly, for the teams running the airport facilities (coaching etc). They are manned up in order to meet the schedule for the day, and if somebody rocks up at the end of the day, way off schedule, then the facilities just aren't going to be there.

Unfortunately, late aircraft tend to go to the end of the queue in priority terms, and it is double bad luck when it happens 'out of hours' as it were.
