Everyone always catches it in the sim, but then everyone always expects it in the sim.
I trained myself a long time ago to always expect it when I'm not in the sim' too. When I say trained, I mean get myself in the mindset that something is going to happen (just like the sim') and when it doesn't...well that's good init! People always say "expect the unexpected". I say "expect the expected". After all it is a mechanical thing and it will go wrong at some point. The same can be applied to anything and everything to a certain degree.

how do i stop myself doing this, or realise that i may be doing it in the first place.
Without wanting to be patronising - Self discipline. Don't do anything unless you know what and why. Check, check and check again.

I still catch myself responding to a checklist without checking what it is I'm responding too, so I stop, go back and then check it...twice, just in case!

After all that I still salivate at the sound of the call bell...even though it is the same as the emergerncy call bell only slightly quieter.
