As a general guide:
Max/min/profile speed on descent:
Max speed: 310-315 KIAS due to the relatively low Vmo (330 KIAS). It's very easy to overspeed if there's a wind change on descent. The -300ER will have a higher Vmo (350 KIAS) which should allow a higher max speed on descent.
Min speed: Not less than 250-260 KIAS at higher levels (above FL250), but lower down can reduce to min. clean speed if necessary (around 230 KIAS in a heavy -300).
Profile speed: 300 KIAS
Speed inside 30nm to dest:
Normally 250 KIAS if speed control is in force (ie 250/10,000), otherwise 300 KIAS reducing to around 220 KIAS by 20 nm or so.
Speed inside 15nm to dest:
Around 180-200 KIAS.
Final approach speed:
Anywhere between 155 KIAS for a heavy -300, and 125 KIAS for a light -200.
CLIAS:
Typically, 300-310 KIAS
Ceiling:
Max operating altitude is 43,100 ft for both models - only achievable at relatively light weights.
Some of the above speeds will vary, depending on weight.
