I flew with West Air Aviation at VGT a few years back when on a long haul slip pattern. Did 3 hrs in the R22 but they also do fixed wing. Mostly fixed wing actually. A google search for "north las vegas flight school" will find it.
VGT is also where the Grand Canyon Twin Otters with the big windows fly from. A bunch of our cabin crew went on one and thoroughly enjoyed the trip. It's about a 20/30 minute drive or so from the hotels I think.
The Grand Canyon isn't the only impressive thing to see, try Lake Mead and the dam (Hoover Dam?), Red Rock Canyon etc.
