The only thing I can suggest is that you keep trying since the Emirates pilot pool is starting to dry up and they are taking less experienced guys to fill the seats. RE the interview process, I bit the bullet and bought the guide

Like PITA states, "and just remember, not just Emirates is hiring pilots" he is correct, you have Qatar and Etihad as the main carriers that are worth applying to.
