Well, first you have to decide whether you want to train via the integrated or the modular route. This is a frequently debated topic and you should be able to read all about it if you search along the lines of "Integrated vs Modular".
The place in Jerez you have probably heard of is called Flight Training Europe.
Once you've decided how and where you want to train, start to contact the schools, get some information, arrange visits etc.

p.s. It's unlikely that the quality of training facilities at your eventual chosen school will in anyway affect your desirability in the eyes of a potential employer. It will more likely be determined by your performance (which can be affected by the quality of instruction) and attitude during the course.
