They do have V2500, the sim can be setup for CFM or V2500 in most cases, they are just computer models.
Just some other numbers I have used ...
Level
Conf 1 - 7 deg
Conf 1+F - 5 deg
Conf 2 - 9 deg
Conf full - 6.5 deg
3 deg approach
Conf 1+F - 4 deg
Conf 2 - 6 deg
Conf 3 - 5
Conf full - 3.3 deg (just set the littlke yellow box so the bottom side sits on the 2.5 deg mark)
Takeoff 15 deg two engine
Take s/e 12.5 deg
Dont think they would make you do manual thrust, if they do use the IAS trend vector as a guide when to add/remove power.
