Room, in my opinion, for regular year-round services from EDI to the following:

Berlin - lo-co would work, maybe Air Berlin or HLX
Dubai - like CO, I think EK would find dual operations at GLA and EDI would work to their advantage.
Geneva - one for Flybe, or maybe easyJet if they can agree a decent rate with BAA
Madrid - Served 2 x weekly during the summer by Flyglobespan, but could easily support an Iberia service.
Milan - Alitalia?
Munich - bmi or Lufthansa. Strongly rumoured for a long time now, but we are still waiting!
Orlando - simply crazy that EDI doesn't have a regular Florida charter any more.
Oslo - SAS. The Duo route was a strong performer before that airline's unfortunate demise.
Toronto - Air Canada. The 2 x weekly summer charters (Air Transat and TCX) aren't anywhere near adequate provision for this route, in my view.
Zurich - Swiss
