Because they don't need training areas, adventure flights/scenics of Sydney and the harbour will still be viable from YSBK (as will helos and commercial charter) for a long time to come, so the airport itself isn't likely to go anywhere anytime soon - it'll just shrink a bit (which will suit the new owners), and force students elsewhere as you point out.
